Bahan :-
250 g butter
150 g gula perang
3 biji telur
1 s/k esen vanilla
200 g carrot [parut dan celur - toskan kering]
100g prune cincang
50 g kismis
230 g tepung gandum ]
1 s/k baking powder ] ayakkan
1 s/k serbuk kulit kayu manis ]

Cara2 :-
  1. Panasakan kukusan
  2. Butter dan gula dipukul sehinga gebu.
  3. Masukkan telur satu persatu dan kacau rata.
  4. Masukkan esen vanila dan kacau lagi.
  5. Masukkan tepung gandum yg telah diayakkan bersama baking powder dan serbuk kayu manis.
  6. Masukkan carrot, kismis dan prune.
  7. Gaul rata dan masukkan dalam acuan yg dilapikkan kertas
  8. Kukuskan dalam kukusan selama 50 minit
  9. Bila telah masak, sejukkan dan sapukan cream keju.


Untuk topping

Bahan :-
250 g cream keju
50 g gula halus
50 g fresh cream
1 cawan yogurt perisa buahan

Cara2
1. Pukul semua bahn sehingga gebu dan sapukan pada kek lobak yg telah sejuk

Ingredients :-

350g salmon fillet, skinned
Juice of half a lime
Juice of half a lemon
1 tbs caster sugar
3tbs fresh dill, chopped
salt and pepper

Methods :-

- Slice the salmon into fairly thick slices and lay in a single layer on a platter
- Pour over the lime and lemon juice (so all the slices are covered)
- Sprinkle over dill, sugar and season with salt and pepper
- Set aside in the fridge for about 10-20 minutes until the salmon is cured
- Serve with dressed salad

Bahan-bahannya
1 sisir pisang India, dibuang kulit dan dipotong serong 3
1 biji gula melaka
1 bungkus tepung bubur cha cha
1 kotak santan
2 helai daun pandan, disimpul
garam secukup rasa
gula pasir secukup rasa

Cara-caranya
  1. Bersihkan dan bilas tepung bubur cha cha.
  2. Kemudian letak daun pandan dan rebus dengan air selama 5 minit.
  3. Masukkan pula pisang, gula melaka dan gula pasir dan garam secukup rasa.
  4. Bila telah mendidih, tuangkan santan dan kacau sehingga ia mendidih sikit matikan api.
  5. Rasa cukup tak gulanya dan kalau dah cukup boleh dihidangkan.

INGREDIENTS

Base
1 1/2 cups plain flour
1/4 cup icing sugar
90g butter, softened not melted
2 egg yolks
1 tblsp water (approx)

Filling
500g cream cheese, softened
1/2 cup caster sugar
2 tsp vanilla essence
3 large overripe bananas
3 eggs, lightly beaten


METHOD

Base
  1. Sift flour and icing sugar into a bowl.
  2. Rub in butter. Add egg yolks and enough water so that the ingredients cling together.
  3. Mix into a ball. Turn out onto a floured surface and knead mixture until smooth.
  4. Cover with plastic wrap and refrigerate for 30 minutes.
  5. Gently roll out pastry with a rolling pin so that its large enough to cover base and sides of a 23cm springform cake tin.
  6. Press pastry into tin, trim the edge.
  7. Lightly prick base with a fork.
  8. Refrigerate for a further 30 minutes.
  9. Preheat oven to 200 degrees celsius.
  10. Cover pastry with baking paper and fill with dried beans or rice.
  11. Bake for 10 minutes.
  12. Remove baking paper and rice or beans and bake for a further 15 minutes until lightly brown.
  13. Remove from oven and set aside to cool slightly.
Filling
  1. Reduce oven to 180 degrees celsius.
  2. Using an electric mixer, beat cream cheese, caster sugar and vanilla until smooth.
  3. Add banana and beaten eggs, beat until smooth.

  • Place cake tin on an oven tray.
  • Pour cheesecake mixture over pastry base.
  • Bake for 1 1/4 hours or until just firm.
  • Turn oven off and allow cheesecake to cool in the oven with the door slightly ajar.
  • When cheesecake is completely cool, cover with plastic wrap and refrigerate for a minimum of three hours, preferably overnight.
  • Dust cheesecake with icing sugar just prior to serving.

Ingredients
3 large bananas (pisang raja) } mashed
250g self raising flour
160g sugar
180g butter
4 tablespoon fresh milk
3 eggs } beaten
1-2 drops banana essence
1 level teaspoon baking powder
1 level teaspoon bicarbonate of soda
pinch of salt

Method
- Preheated oven at 150'C
- Sieve flour, baking powder, bicarbonate of soda and salt into a dry container
- Put butter and sugar in a bowl, cream untill creamy white
- Add beaten eggs a little of a time
- Beat well after each addition
- Add essence, milk and mashed banana
- Fold in flour to blend well
- Pour mixture into a greased cake tin
- Bake at 150'C for 1 hr

Bahan-bahan

1/2 kati beras siam
1 biji kelapa, dapatkan 1 mangkuk pati santan dan satu mangkuk santan cair
1/2 kati udang hidup yang besar, buang kulit
1/2 tahil udang kering, ditumbuk
2 hiris ikan parang bakar, ditumbuk
1 sdk lada sulah, ditumbuk

digiling halus:
12 ulas bawang merah
10 ulas bawang putih
3 inci halia

1 sdt halba
1 biji bawang besar, potong melintang
daun selasih
serbuk perisa dan garam secukupnya

Cara Membuat
  1. Basuh beras bersih-bersih dan masak atas api perlahan dengan 1 1/2 cupak air selama satu jam.
  2. Tambahkan air panas jika airnya kering.
  3. Masukkan 1 mangkuk santan cair, garam, halba, udang hidup, dan rempah-rempah giling, udang kering, ikan bakar, bawang besar dan daun selasih.
  4. Didihkan selama sejam.
  5. Masukkan 1 mangkuk pati santan dan perisa.
  6. Masak lagi 1/2 jam dan dihidang.

Cara Membuat
- Cuci ikan dan letak dalam periok ,
- Tumbuk bawang, cili, dan ketuk serai.

- Apabila ikan separuh masak masukkan lain-lain bahan dan renih selama 3 minit
- Biar seketika sehingga terung empuk

Ingredients

1(6oz.) package cherry or grape tomatoes
1(6-7oz.) jar green olives
1 can black olives
1 small red onion
1/2 cup olive oil
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon oregano
salt and pepper to taste

Method

  1. Cut tomatoes and olives in half.
  2. Finely chop onion.
  3. Place all in a large bowl.
  4. In a small bowl or glass jar, mix together olive oil, vinegar, sugar and oregano.
  5. Pour over tomato-olive mixture.
  6. Salt and pepper to taste.
  7. Gently stir to coat.
  8. Chill to combine flavors.

Cara:
1. Pukul cheese dan gula hingga kembang.
2. Masukkan fresh cream dan agar-agar cair dan gaul rata.
3. Tuangkan dalam bekas dan sejukkan.
4. Jika suka bolihlah letakkan topping...saperti blueberry atau sbarang perasa lain.

1 s/mkn halia kisar
* Lumurkan halia kisar dengan ayam. Perapkan sebentar.

2 s/mkn besar tepung beras
1 s/mkn besar tepung jagung
1 s/mkn lada sulah
1 s/teh garam
1 s/mkn gula
2 butir telur
2 s/mkn susu sejat

Cara2 :-
  • Dalam satu mangkuk satukan kesemuanya .
  • Gaul hingga adunan menjadi sebati.
  • Masukkan isi ayam yg telah di perap dengan halia.
  • Goreng ayam dalam minyak yang agak panas dengan api yg sederhana.
  • Bila ayam sudah di goreng, toskan minyaknya.
  • Lalu potong ayam dengan menggunakan pisau yg tajam.
  • Letakkan di atas piring lalu siramkan dengan sos lemon.
  • Sedap dihidangkan semasa panas.

4 s/mkn jus lemon
5 s/mkn gula
3 s/mkn tepung jagung
300 ml air atau secukup kepekatan yang anda inginkan.
1 s/mkn cuka

Cara2 :-
  • Satukan kesemuanya dalam periuk kecil.
  • Lalu didihkan, kacau hingga sos agak pekat sedikit.
  • Rasa apa yang kurang, bolehlah ditambah.
  • Padamkan api lalu sejukkan. Sedia untuk di gunakan.

Cara2 :-
  1. Daging dibasuh dan dipotong kiub.
  2. Ketumbar, jintan, lada hitam, bunga cengkih, bunga lawang, halia dan lengkuas dikisar dan digoreng tidak terlalu garing.
  3. Campurkan bahan kisar, santan, daging dan serai kedalam kuali dan jerang diatas api sederhana.
  4. Masak sehingga daging empuk, masukkan kelap potong, kerisik, daun kunyit dan rasa gram dan gula.
  5. Masak sebentar angkat dan dihidang dengan dengan ketupat dan lemang.

4 biji telur rebus
3 sdb cili boh
1 sdk belacan
2 sdb air asam jawa
1 biji bawang besar, potong bulat dan tebal

Cara2 :-
- Kupas telur dan letakkan dalam mangkuk
- Panaskan minyak dan tumis bawang hingga wangi.
- Masukkan cili boh, belacan dan air asam jawa
- Goreng hingga wangi dan pecah minyak, tambahkan air jika perlu.
- Masukkan bawang besar, garam dan gula goreng hingga kering
- Tuang sambal atas telur dan sedia untuk dihidng.

Ingredients:-
1 kg tapioca tubers (ubi kayu)
220g white sugar (gula putih)
400 ml coconut milk (santan)
1 egg (telur)
Pinch of salt (secubit garam)

Methods:-
  1. Grate the tapioca, avoid taking the tough fibre that runs down the centre of the tubers. Weigh the grated tapioca, you should obtain a final yield of 800g.
  2. Squeeze it in a muslin cloth or press in a sieve, collecting the juice in a small bowl and retaining the grated tapioca. Leave the juice undisturbed for 15 minutes and then carefully pour off, discarding the liquid on the top, leaving behind the tapioca starch the bottom of the bowl.
  3. Combine the grated tapioca, tapioca starch, sugar, coconut milk, beaten egg and salt.
  4. Lightly brush the inside of a shallow round or square cake tin roughly 16cm across, with light vegetable oil or butter. pour the tapioca cake mixture into the tin.
  5. Level the top with a spoon and bake in a preheated 200C oven for about 40 minutes or until golden brown.
  6. Cool before cutting in squares.

Fried Rice Pineapple

Ingredients
4 tbs oil
2 tbs chopped garlic
20g French beans, cut into 3cm pieces
300g cooked rice
2 eggs, beaten
1/2 tsp salt or 2tbs soy sauce
100g pine nuts
20g roasted almonds
Half a medium-size pineapple
5 small sheets of dried nori seaweed, (from supermarkets), cut into strips.

Method
  1. Heat oil in large wok over a medium fire. When hot, add garlic and stir-fry quickly for about 30 seconds until fragrant but not brown.
  2. Add French beans and stir-fry for another 1 minute. Then add rice and continue stirring to mix well.
  3. Make space in centre of wok and pour in beaten eggs. Leave for 30 seconds, then quickly scramble and mix with rice. Season with salt or soy sauce.
  4. Continue frying for about 1 min, then add pine nuts and almonds. Cook for another 30 seconds.
  5. Spoon into pineapple half and garnish with seaweed strips. Serve at once.

Cara2 :-
1. Masakkan sagu sampai pekat bersama air pandan
2. Bila masak sejukkan
3. Masukkan santan / susu cair bila menghidang
4. Masukkan sekali laici & airnya.
5. Masukkan ketulan ais jika suka

Chilli Roast Chicken


Ingredients :-

8 fresh red chillies, 4 deseeded and roughly chopped, 4 left whole
4 tbsp olive oil
1 tsp turmeric
thumb-sized piece fresh ginger, peeled and chopped
3 cloves garlic, roughly chopped
1 handful fresh coriander leaves
1/2 tsp salt
1 whole chicken
900g potatoes, peeled and cut into large chunks
25g butter


Methods :-
  1. Make the chilli paste - put the 4 chopped chillies in a food processor along with the oil, turmeric, ginger, fresh coriander and salt, then whiz to a rough paste, or pound together using a pestle and mortar. Set aside 2 tbsp of the paste.
  2. Marinate the chicken - Loosen the skin around the neck end of the chicken. Smear half the chilli paste under the skin, then smooth the skin back i place. Spread the remaining paste all over the chicken and put in a non-metallic dish. Cover loosely with cling film and chill for at least 2 hours, or overnight.
  3. Roast the chicken - Turn the oven to 190C. Place the chicken in a large tin with the potatoes and the remaining chillies tucked around. Roast for 1 hour, turning the potatoes once.
  4. Baste the potatoes - Melt the butter and mix with the reserved chilli paste, then drizzle over the potatoes. Return to the oven and roast for another 20 to 40 minutes, basting and turning the potatoes once or twice, until the chicken is done and the potatoes are crispy.

Creamy Pumpkin Soup

Ingredients
3 teaspoons canola or olive oil
1 onion, chopped

750 g chopped pumpkin

1 clove garlic, crushed

1 teaspoon curry powder, (more if you like spicy)

1 cup vegetable stock

1 cup reduced fat milk
reduced fat yoghurt, (optional)
freshly chopped herbs, to taste


Method

1. Heat oil in saucepan over medium heat.
2. Add onion, pumpkin, garlic and curry powder and fry for 5 minutes.
3. Stir in vegetable stock, then cover and cook until pumpkin is tender, about 15 minutes.
4. Stir in milk.
5. Process in food processor until smooth.
6. Serve topped with a swirl of yoghurt or freshly chopped herbs.

Cara Membuat :-
- Bersihkan udang
- Senang cite aku blend je sume bahan2 di atas
- Panaskan minyak n tumis bahan mesin sehingga naik bau
- Baru ni aku x guna cili kering, aku guna cili boh aje..so masukkan cili boh
- Bila dh garing, masukkan udang
- Masukkan air asam jawa n tambah air jika suka
- Masukkan garam, serbuk perasa n sos tiram secukup rasa
- Kacau hingga pekat n masukkan petai
- Biarkan hingga masak

Tart Telur | Egg Tart


Bahan untuk Pastri:
500g Tepung gandum
125g Gula icing
250g Butter (tips: butter sejuk dari petisejuk)
2 biji telur gred B
1 tsp Esen Vanila

Cara2 :-
- Ayak tepung, campurkan gula icing.
- Masukkan butter dan gaul hingga jadi crumbs.
- Masukkan telur dan esen vanila dan gaulkan hingga rata.
- Bentukkan jadi sebiji bola.
- Sejukkan dalam peti sejuk sebelum digunakan.

Bahan untuk Inti :-
250g Air
125g Gula
5 biji Telur gred B
100g Susu cair (Evaporated milk)

Cara2 :-
- Larutkan gula kedalam air. (buat air gula)
- Kalau guna air suam, biarkan sejuk dulu sebelum masukkan telur dan susu cair.
- Pukul semua 4 bahan hingga sebati kemudian tapiskan dan sedia untuk digunakan.

Cara2 memasak tart :-
  • Isikan atau bentukkan pastry kedalam acuan.
  • Bakar pada suhu 160 ke 180 C selama 15 minit atau sehingga kelihatan kering atau sedikit kekuningan.
  • Keluarkan dari oven.
  • Tuangkan filling tadi kemudian masukkan semula ke dalam oven.
  • Bakar lagi pada suhu 180 C selama 15 minit atau sehingga telurnya masak

Cara2 :-
1. Rebus ikan & ambil isinya, kisar.
2. Panaskan minyak & tumis bahan2 tumis.

5. Masukkan santan, ikan, udang kering & udang basah yang telah dikisar halus.
6. Kacau perlahan2 hingga mendidih.

  • 7- 8 keping dada ayam
  • 7 ulas bawang putih ] kisar
  • 6cm kunyit hidup ] kisar

  • 7 ulas bawang merah ] kisar
  • 2 - 3 sudu makan cili boh atau cili kering
  • 2 batang serai dihiris halus
  • 6cm lengkuas dihiris halus
  • 1 sudu makan jintan manis ] digoreng tanpa minyak dan dikisar halus
  • 1 sudu makan ketumbar ] digoreng tanpa minyak dan dikisar halus
  • sedikit belacan
  • 1 cawan kelapa parut ditumbuk
  • 1 cawan santan pekat
  • garam dan gula secukup rasa
  • sedikit cili hidup merah dan hijau dipotong mengikut kesukaan
  • sedikit daun limau purut dihiris halus sedikit daun kunyit

Cara-cara
  1. Tumis daun pandan dan bahan yang telah dikisar bersama cili kering/cili boh, serai, lengkuas dan belacan hingga masak dan naik bau.
  2. Kemudian masukkan serbuk jintan manis dan ketumbar, digaulkan sebati.
  3. Masukkan kelapa parut tadi dan digaulkan rata.
  4. Masukkan santan tadi dan digaulkan rata.
  5. Tambahkan air jika rasanya mau. Selepas itu masukkan garam dan gula secukup rasa dan di gaulkan rata.
  6. Apabila kuah hampir kering, masukkan daun limau purut & daun kunyit yang dihiris tadi dan cili hidup. Angkat dan bolih disajikan.

Bahan-bahannya
500 gram kuay teow
200 gram daging, dipotong nipis
10 ekor udang
2 ikat sawi, dipotong lebar 2 inci
secukupnya taugeh, dicuci dan toskan
3 sudu makan tomoto sos
5 sudu makan kicap
4 biji telur
garam secukup rasa
serbuk perasa jika suka
gula secukup rasa
minyak secukupnya

Bahan untuk dikisar
15 tangkai cili kering, dibersihkan rendam dengan air panas
2 biji bawang besar
4 ulas bawang putih

Bahan untuk hiasan
bawang goreng
daun sup
limau kasturi jika suka

Cara-caranya
  1. Panaskan minyak dalam kuali. Pecahkan telur dan goreng ala scrambled (pecah-pecah) sekejap. Jangan terlalu lama biar telur tu lembik-lembik sikit. Angkat dan ketepikan.
  2. Tambah minyak secukupnya dan tumis bahan yang telah dikisar sehingga naik bau. Masukkan daging dan sedikit air dan masak lagi sehingga dagingnya empuk. Masukkan juga sos tomato, kicap, garam, serbuk perasa dan gula.
  3. Tumis rempah sehingga ia bertukar warna kegelapan sikit biar lama sikit gunakan api sederhana besar. Rempah kalau tumis sempurna nanti meenya jadi sedap.
  4. Bila rempah dah ditumis dengan sempurna. Masukkan udang, gaul sebati biarkan sebentar.
  5. Masukkan pula sawi gaul rata. Masukkan kuay teow dan telur yang telah digoreng tadi dan gaul rata.
  6. Kemudian akhir sekali kecilkan api masukkan taugeh dan gaul rata.
  7. Padamkan api dan sedia untuk dihidangkan.
  8. Letakkan bahan2 hiasan semasa menghidang

1 biji swiss roll coklat
250 gm keju cream [philidephia]
150 ml yogurt berperisa buah [ducth lady]
1/2 cawan gula
serbuk nescafe
filling blueberry [jika suka]

Cara
1. Swiss roll coklat dipotong nipis.
2. Pukul keju dan gula sehingga gebu.
3. Masukkan yogurt dan pukul lagi sehingga rata.
4. Susunkan swiss roll dalam gelas atau mangkuk.
5. Lapiskan dengan adunan keju dan ayakkan serbuk nescafe.
6. Susunkan lagi kek dan lapiskan dengan adunan keju. Ayakkan serbuk nescafe.
7. Ratakan filling blueberry jika suka.
8. Sejukkan beberapa jam sebelum dihidangkan.

2 pieces tempe ~ sliced thinly
1/2 cup dried anchovies
1/2 cup chillie paste + blended onion
2 cloves of garlic ~ knocked
2 tablespoons dark sweet soya sauce
2 tablespoons sugar
2 tablespoons tamarind juice
salt to taste
1 Bombay onion ~ diced
3 green chillies ~ julienned

Method :

1. Fry the tempe and dried anchovies (separately) till golden brown and set aside.
2. Heat a little oil in a wok, add in the chillie paste and blended onion. Let it simmer till fragrant.
3. Add in the garlic, tamarind juice, soya sauce, sugar and salt.
4. When it's slightly dried, put in the fried tempe, anchovies, diced onion and green chillie. I added red chillies as well.
5. Stir to mix. Remove from heat and ready to serve.
